Rhabarber Kompott Bspw. auf Tartboden mit Mandelcreame oder in Kombination mit Vanille Pudding füllen, daher 1/2 Tart

Ingredient   1/2 22cm Tart 1/2 12.5cm Tart
Rhubarb 100% 300g (geschält) 150g
Sugar 25% 75g 37g
Water 8% 24g 12g
Salz   Prise Prise

Instructions

  1. Peel only the part that comes off when cutting the top and bottom off
  2. Cut Rhubarb into small pieces and remove any strings you find
  3. Mix with sugar and the tiniest bit of water, just so that it does not burn before the rhubarb looses water, heat until it cooks and reduce heat so that it bubbles a bit
  4. Let it simmer until you can draw a line into the bottom of the pot and it only fills very slow
